The brown bits are sugars, actually, they are the caramelized sugars from the meat. And the only real purpose of "searing" is to create these bits of caramelization to make the sauce a pretty brown color, and give it a more intense flavour. (Sugar works much the same was as salt).
As an aside, "searing" doesn't actually seal the meat at all, which you can prove for yourself by cutting a cube of meat, searing it on all sides, and then squeezing it…the juices will still ooze out!
