"I would do" refers to the future, although grammatically it gets confusing, as the future form is will. I'm not sure if this is at all grammatically correct to begin with…
i.e."Some time I would do that."
"I would be doing" refers to the past or the present.
i.e. "Had I not gone with her, I would be doing…"
